I've been on a noodle kick of late and decided to try glass noodles. I don't know if many are aware what glass noodles are but I definitely had no idea. I thought that glass noodles are same as rice noodles but nope..glass noodles are transparent noodles made from starch and water. Glass noodles I made were made out of pea starch, green mung bean starch and water. Pretty healthy overall and were delicious! I can't believe how easy they were to make and fun!!
INGREDIENTS
200g chicken breast, thinly sliced (bite size)
160g glass noodles
2 tbsp vegetable oil plus extra for the eggs
3-4 garlic cloves, finely chopped
1 inch ginger, finely chopped
1 medium onion, sliced
2 eggs, lightly whisked
1/2 cup shredded carrots
1 large red chili pepper, sliced (you can deseed them for less spice)
1/2 tsp coriander powder
1/2 tsp cumin powder
3-4 spring onions , cut into batons.
1 tsp fish sauce plus 2 tbsp for the stir fry
1/2 tsp black pepper
1/4 tsp cayenne pepper
2 tbsp oyster sauce
1/2 tsp soy sauce
1/2 tsp sugar
Lime wedges
Dry roasted peanuts
PROCESS
Marinate the chicken in 1 tsp fish sauce, black pepper and cayenne pepper - 20 minutes (or longer)..can substitute the meat of your choice, shrimp, or tofu.
Place the noodles in warm water not boiling water for about 10 minutes. Drain the noodles and cut them with scissors to the desired length to make it easier to eat! Put a little bit of oil so they dont stick together and toss.
While the noodles are soaking:
Mix the stir fry sauce:
2 tbsp oyster sauce
2 tbsp fish sauce
1/2 tsp soy sauce
1/2 tsp sugar
Heat the oil in a wok
Saute garlic, ginger and onions for 1-2 minutes.
Add Chicken and stir fry for about 3 minutes
Add the shredded carrots - stir fry for 3-4 minutes.
Move all the ingredients to one side to make room for the eggs.
Put dash of oil and pour eggs - scrambled the eggs. Once the eggs have been scrambled then mix everything together.
Add the noodles and the stir fry sauce - toss well.
Add the red chili peppers and the spring onions - give it a good toss.
Put the noodes in your desired dish and garnish with coriander and roasted peanuts. Lime wedges on the side.
Ready to serve!
