Palak Paneer (Saag Paneer) Instant Pot Savvy!

I love all Indian dishes (well..okay...I love food) but this one is a favorite of mine and took only 15 minutes from start to finish. My sisters would make this for me all the time ..well its time I started cooking for them! I can guarantee that it took them longer as they had to do it without the instant pot. There are loads of different versions of how to make saag but I look for the easy yet delicious ways of cooking! INGREDIENTS


1 Bunch of Rapini / ½ pound of spinach/ ¼ of broccoli florets ( don’t have rapini or broccoli..that’s okay ..just use 1 pound of spinach…I prefer just spinach)

2 tbsp ghee or sesame oil …ghee just tastes so much better..ghee is clarified butter..everything tastes better with butter! https://amzn.to/3vUOBVH

2 tsp minced garlic

2 tsp minced fresh ginger

4 thai green chili – chopped – also used one jalapeno pepper – as we know I love spice! (Optional)

1 large white onion - chopped

2 tomatoes – chopped

2 tsp cumin powder

2 tsp garam masala

½ tsp cayenne pepper

1 tsp black pepper

1 tsp ground turmeric

1 tsp salt

1 tbsp corn flour ( can substitute with corn starch)

½ cup water..or can be less..never more…don’t want it to be watery!

1 ½ cup paneer – cut into ½ inch cubes - marinate for about 20 minutes with oil, salt, pepper and turmeric (optional but I find it gives the paneer more taste)

Pinch of kasoori methi


In the Instant pot


Heat ghee/oil – saute garlic, ginger, green chilis and onions (1 min) – here’s the secret so that the “burn sign” doesn’t show up…turn off the instant pot to cool it down – approx 5 minutes! Once cool…


Add all the ingredients except paneer - mix well

Pressure Cook on high for 4-5 minutes…yes thats all!

Quick release the pressure and open the lid -stir well.

Puree using an immersion blender! .

Texture can be to your liking..really smooth or chunky!

Add the corn flour and mix really well!

Add the paneer – mix slowly

Add the kasoori methi and mix!

Ready to serve with roti or naan!

Notes: instead of paneer..you can even use meat (cook it separately then add) or plain…EXPERIMENT
