I love noodles..I mean who doesn't. It's one of my favorite items on the menu when we order chinese food. A friend of mine asked me for Hakka Noodle recipe. I thought about it and decided to give it a try and I must say...it was delicious! I even went for seconds. I combined indian spices to give it the indo flavor. Believe it or not but this meal can be ready in 15 minutes. I would recommend getting all the ingredients ready before you boil the noodles as everything will move very fast!
INGREDIENTS
400G Hakka Noodles ( you can also use Shanghai Noodles)..you can cut the noodles to make it easy to eat.
1 tbsp sesame oil
2 tbsp vegetable oil (split)
2 tsp minced garlic
1 tsp minced ginger
2 green chilis sliced (optional)
1 celery stalk chopped
1 medium red onion sliced
1 large carrot shredded
1 large red bell pepper sliced ( can use any colour)
1 cup red cabbage sliced
2-3 stalks green onion chopped (keep the green part for garnish)
1 cup cabbage sliced
3 tbsp soy sauce
1 tbsp rice vinegar (or white vinegar)
2 tsp hot sauce (optional)
1/2 tsp sugar
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp cayenne powder
juice of half a lime
fresh coriander, lime (cut into wedges) and dry roasted peanuts for garnish.
Instructions:
In a large pot - boil water with a dash of salt. Once the water has boiled add the noodles. Leave in for about 2-3 minutes. Leaving longer then that will make them mushy!
Rinse the noodles in cold water to stop the cooking process. Add 1 tbsp of the vegetable oil so that the noodles separate and toss.
Put aside for the moment.
In a large wok:
Heat 1 tbsp of vegetable oil
Once hot ..add the minced garlic and ginger..cook for about 1 minute
Add red onions and saute for 2 minutes
Add carrots, bell peppers, green onions, red cabbage, and cook on high heat for about 2 minutes (remember..we want the vegetables to be crunchy so don't need to cook for too long).
Add the black pepper, coriander, cumin, cayenne and salt. Give it a good mix.
Add the noodles and the sesame oil.
Add the juice of the lime and cilantro..mix well.
Put in you favorite dish and garnish with the green of the spring onions, peanuts and lime wedge.
At this point I like to add a dash of my home made chili oil.
Serve as is or add with your favorite dish. I like it as is so I can have seconds :)
Remember to experiment! You can add chicken or shrimp! Add you favorite vegetables like mushrooms or green cabbage instead of red!
