Cauliflower Pizza : Goodness Gracious It's delicious!




Cauliflower Pizza is a healthy and delicious alternative to pizza cravings. It's a low carb gluten free alternative to the traditional flour pizza crust but without compromising the taste. I've been wanting to make the cauliflower pizza for a very long time but didn't think I would be able to, thought it will be time consuming...just kept making all kinds of excuses. My friends wanted me to buy ready made cauliflower crust but my new found love of cooking would not allow me to do such a thing. I had to try it, prove to myself that I could do it...so I did just that and it was even better then I imagined. It was delicious and honestly you wouldn't even taste the difference. INGREDIENTS


Large head of cauliflower - roughly cut into florets

2 Eggs - lightly beaten

1 1/2 cup shredded mozzarella cheese (can use any type of cheese - I used cheddar and mozzarella), put aside about 1/4 cup for topping.

1/2 cup freshly grated parmesan cheese

1/2 tsp kosher salt

1/2 tsp pepper

1/2 tsp chili flakes (optional)

1/2 tsp dried oregano

1/2 tbsp Italian seasoning

1/2 tsp garlic powder (optional)

1/4 cup pizza or pasta sauce

2 gloves minced garlic

Your favorite toppings ie bell peppers, mushrooms, basil, grilled chicken, ham, etc.


DIRECTIONS

  1. Preheat the oven 425 degrees F.

  2. Line a baking sheet with parchment paper or silicone baking mat and set aside.

  3. Mix pizza sauce and minced garlic - set aside

  4. Place the cauliflower florets in the food processor and pulse until the texture is fine like rice grains.

  5. There are 2 options here...place the cauliflower in a microwave safe bowl and microwave on high for 4 minutes. OR spread on baking sheet and bake in the oven for 15 minutes. End result will be the same ...micro is a bit faster.

  6. Let it cool for a bit.

  7. Line the bowl with cheesecloth or tea towel and place the cauliflower in the cheesecloth. Fold, hold and squeeze out the excess water (use those muscles :)! Make sure to remove as much of the water as you can. Cauliflower should be very dry.

  8. Transfer the cauliflower to a large bowl. Stir in eggs, cheese, Italian seasoning, garlic powder, salt, pepper, chili flakes, dried oregano - mix well. At this point ..if you feel that its not dry enough then drain again using the cheesecloth. Mixture should be dry.

  9. Take the baking sheet with parchment paper and spray with cooking spray.

  10. Transfer the cauliflower dough to the center of the baking sheet and spread evenly with your hands. At this point you can decide if you want one large pizza or mini pizza which are great for parties!

  11. Bake for 15-20 minutes (should be golden brown).

  12. Remove and flip over (donot use spatula...should be able to just flip using the parchment paper. You shouldn't need the parchment paper for the next step).

  13. Bake for another 5 minutes.

  14. Remove and top with pizza sauce (remember not to use too much...we don't want it to be mushy!

  15. Add you desired toppings. Don't overload with toppings as you may not be able to hold the slice. Top with cheese but not too much as there is cheese in the crust!

  16. Bake for about 5-7 minutes (should be nice golden brown and cheese melted)

  17. Remove and let it cool for about 3-5 minutes
