Cabbage Soup - lets start off 2021 being healthy!!




Happy New Year ..wishing you all a very healthy, happy and prosperous 2021. Lets make 2021 the year of abundance and joy!

I've decided to start this year being healthy (yes I've gained covid-working from home -weight). I know it's January but by posting here I'm actually committing to the process and I hope you all follow me! As much as I've discovered my joy of cooking it is not helping my waistline at all! That being said, I've decided to take action and start the year with healthy cooking. I'm starting with cabbage soup to begin my goal towards a healthy 2021. Some call it diet soup, wonder soup or detox soup and the mind set with the word "diet" is that it won't be tasty but not my cabbage soup! This soup is full of flavors, aromas, spices, and the cabbage has a wonderful crunch to it! You will definitely go back for a second bowl and the best part is that you can eat as much as you like without worrying about the waistline. There are so many different version of this soup but I've added my own touch to it. Feel free to experiment with your favorite veggies and spices. The only must is the cabbage (hmmm...)and I'd be careful if adding zucchini - add it in the last minutes of cooking..you don't want a mushy soup! It is absolutely yummy and simple to make! Vegan and gluten free!


INGREDIENTS


1 Medium cabbage (or 1/2 of large cabbage)

1 tbsp Olive Oil

1 chopped onion

1 cup of diced carrots (2-3 large carrots)

1 cup of diced green bell peppers

1 cup of diced red bell peppers

1 cup of dices celery

1 can of diced tomatoes ( I used Hunts roasted garlic)

1 jalapeno pepper finely chopped (left the seeds it for the kick) - optional

2 tbsp garlic paste

1 tbsp ginger paste

4 cups of vegetable broth (can use chicken or beef)

1 tsp salt

1 tsp cumin powder

1 tsp coriander powder

1 tsp garam masala - optional

1 tsp chili flakes - optional

1 tsp cumin seeds

1 tsp ground black pepper

1/2 tsp turmeric powder

1/4 tsp cayenne pepper - optional

1/2 cup chopped coriander for garnish


PROCESS


In a large pot:

  1. Heat oil

  2. Saute onions, garlic paste, ginger paste, carrots, celery, bell peppers for about 5 minutes.

  3. Add in cabbage - mix well

  4. Add in tomatoes, spices, broth...give it a good mix

  5. Bring to a boil

  6. Lower heat and simmer for about 15 minutes ( until the vegetables are tender)

  7. Add the coriander as garnish (you can also garnish with spring onions, avocado..even cheese)

  8. Taste and adjust as desired.

This soup is sooo good and full of flavor. Has the perfect crunch, spices and heat! It can be stored for several days in the refrigerator or you can freeze it for upto 4 months! YUMMY!
